Caramel Croissant Pudding Extra Portions

I'm hosting a dinner for 6 people and wondered is it a simple case of trebling the quantities of the Caramel Croissant Pudding? Thanks

Our answer

The first thing we would mention about Nigella's Caramel Croissant Pudding (from Nigella Express and on the Nigella website) is that it is a fairly substantial dessert and it mentions in the recipe that it feeds 2 very greedy people! So if you are serving the pudding as part of a dinner party then you may find that you will not need to make 3 times the quantity to feed 6 people as it will be too much after a starter/appetizer and a main course.

We would suggest making maybe a double quantity of the recipe and this should fit in a 1 litre/4 cup ovenproof dish - one that is not too deep. And although the recipe quantities have doubled it is unlikely that you will need to double the cooking time. We would suggest baking the dish for 30 minutes and then checking it - the custard should be very lightly set and the dish slightly puffed up. If the pudding still looks very liquid then bake for a further 5 minuts and check again.
