Chicken, Bacon and Mushroom Pies
Asked by Wheatie1. Answered on 4th April 2012
Full question
I saw Nigella making the Chicken, Bacon and Mushroom Pies during one of her TV shows and Nigella used a chicken stock concentrate from a bottle. Could you please give a recommended brand name for this so it can be ordered online? I can't find anything like this in my supermarket, but if it's British I may be able to find it on one of the UK grocery sites. Thanks!
Our answer
The Chicken, Bacon and Mushroom Pies appear in Nigella Express (p175) and the recipe is also on the website (see link below). The recipe calls for 300ml (1 1/4 cups) hot chicken stock and although you can use stock concentrate to make up the stock you could also equally use your favourite stock or bouillion cube, stock granules or powder, ready-made chicken stock (broth) from a carton or can, or home-made chicken stock.
There are a few stock concentrates available now and you may find a local version on-line. In the UK there are two widely distributed brands - Knorr's Touch of Taste (we believe this may be sold in Canada under the Bovril brand) and Oxo liquid stock concentrate. In the US there is a stock concentrate paste called Better Than Bouillon and in Asia Maggi distribute stock concentrates in some markets. The brands do vary so when making up stock please follow the instructions on the packaging.
