Full question
Hi Team Nigella, can I use drumsticks for the Chicken With 40 Cloves Of Garlic? I don't have thighs and I can't find any now during this pandemic period.
Our answer
Nigella's Chicken With 40 Cloves Of Garlic (from KITCHEN) slowly cooks chicken thighs with whole cloves of garlic. The garlic softens and mellows as it cooks, becoming sweet and sticky. The cloves can then be squished out of their papery skins and eaten with the chicken.
We think that you could use drumsticks instead of thighs for this dish. They have less fat, but as the dish is covered during cooking there is less risk of the drumsticks drying out. However drumsticks are less meaty than chicken thighs so we suggest that you use two drumsticks to one thigh (so for the recipe use 16 drumsticks). The cooking time will be shorter and drumsticks are only likely to need an hour to cook through. If the garlic has not quite cooked through after this time then remove the drumsticks from the casserole and put on a warm plate. Cover with foil and leave in a warm place. Return the covered casserole to the oven and cook for a further 15-30 minutes and when the garlic is soft return the drumsticks to the casserole to serve.
