Nigella's Chicken With Tarragon Salsa Verde (from NIGELLISSIMA) slathers roasted chicken breasts with an anise flavoured, slightly astringent tarragon sauce. The dish itself is designed to be eaten with the chicken still warm, as it is roasted and then rested for 5-10 minutes while the sauce is made. The sauce also includes the cooking juices from the chicken, for extra flavour.
If you have leftover sauce then it will keep in the fridge in an airtight container for up to 3 days and can be served with cold chicken or with cooked salmon (warm or cold). Leftover cooked chicken can be stored in an airtight container in the fridge for up to 3 days.
