Chili Jam Using Powdered Pectin
Asked by Optimistic Critic. Answered on 28th September 2011
Full question
I am dying to make your Chili Jam (Christmas, p241), however I cannot find jam sugar anywhere. Can I modify the recipe using powdered pectin? Please help.
Our answer
As jam sugar (sugar with added pectin) is not available in all markets, the Chilli Jam was tested in the US using powdered pectin and it is certainly possible to use powdered pectin. In the US we suggest using a 1.75-ounce box of powdered pectin (such as Ball's Original fruit pectin) and this is added to regular white sugar at the beginning of the recipe. As pectins vary a little acoss different markets you may need to adjust the powdered pectin a little using the information provided with the pectin.
There is also a liquid pectin (usually marketed under the brand name Certo) and this is added at the end of the jam making process, after the jam has been boiled. It is possible to use this type of pectin too, but you will need to check the quantity needed by referring to the information provided by the manufacturer.
