I can imagine the great flavor in the Jumbo Chilli Sauce. My question is, when you say, 'red chilies', are you referring to a fresh red jalapeno or a dried chile such as chile d'arbol? Thank you.

Nigella's Jumbo Chilli Sauce (from KITCHEN) is a spicy, punchy sauce that can be served as a fiery dip or as a condiment with cold or grilled meats, chips (French fries) or anything else you think needs a little extra kick. The ingredients include red chillies and these should be fresh chillies, not dried ones. Dried chillies are much hotter and will also not blend as well into the sauce as the skins tend to be papery.
Chillies vary in heat and so the chillies you use will affect the pungency of the sauce. We would suggest using medium heat chillies, such as Dutch red finger chillies or red jalapenos. Red serrano and red fresno chillies are also a possibility though are usually slightly spicier. You can remove the seeds and white membrane from the inside of the chillies you use, if you want to make the sauce less spicy. We would prefer to avoid the hotter chillies, such as chile d'arbol and Thai chillies.
