fresh tomatoes – split and broil on a cookie sheet, skin side up until blackened jalapenos– split, core remove seeds and white inner part and broil skin side up until blackened (cooking takes the heat out of jalapenos) – all ingredients above, chop (not pulverize) in food processor (usually requires 2 loads) Canned tomatoes – chop (not pulverize) in food processor mix it all up in a 3 quart mixing bowl add remaining ingredients (cilantro, green onions, lime juice, chili powder, cinnamon, pepper and salt serve right away - or - refrigerate in Tupperware, tastes better on day 2 tastes better a little warm (microwave before serving) experiment - !!! if it's not spicy enough add raw jalapeno or Tabasco or cumin or garam marsala or curry serve with chips serve as a condiment with burgers, fish, chicken

- 12 jalapeno peppers
- 16 ounces tinned tomatoes
- ½ cup cilantro
- 1 tablespoon garlic (fresh)
- ½ cup scallions
- juice of 1 lime
- 1 tablespoon chili powder
- 1 tablespoon cinnamon
- 1 tablespoon black pepper
- 1 tablespoon salt
