Full question
I'm not a vegan person and I can't find coconut butter or oil, or vegetable shortening for that matter. I can use flavourless vegetable oil, like sunflower oil, in the cake. But can I use normal dairy butter in the frosting and in the cake?
Our answer
Nigella's Dark And Sumptuous Chocolate Cake (from SIMPLY NIGELLA) is an extremely easy to make chocolate cake that is also vegan. For the sponge layers it is possible to use a flavourless vegetable oil as an alternative but we would not recommend using butter as the fat content of butter is lower than oil and this could make the cake slightly dry.
The chocolate frosting is made with a combination of melted chocolate, coconut butter, sugar, water, cocoa powder and espresso powder. Here it is possible to replace the coconut butter with regular, unsalted butter without any major differences to the taste or texture of the frosting. If you wish to keep the cake vegan then it is also possible to use a vegan margarine instead of the coconut butter.
