Chocolate Dessert Which Is Dairy/Egg/Wheat Free
Asked by MirandaB. Answered on 25th February 2011
Full question
I am having a freind over for dinner at the weekend, unfortunately she has just been diagnosed as allergic to Wheat, Dairy and mildly intolerant of eggs. Can you please help in finding a tasty pudding that is not just fruit? She can eat dark chocolate... so I was hoping for something chocolatey and yummy?
Our answer
Although your friend has a restrictive diet there are some recipes that can be adapted to ensure a sweet ending to your dinner. If your friend is happy to eat eggs then Nigella has featured flourless chocolate cakes in many of her books - Kitchen has one on p281 - and margarine can be substituted for butter where necessary but check the margarine is dairy free as some brands contain buttermilk. The Venetian Carrot Cake in Kitchen (p278) also has eggs but no flour or dairy.
The Rice Krispie Brownies in Kitchen (p312) can also be adapted easily using all dark chocolate instead of the mixture of milk and dark, or use a dairy-free milk chocolate instead of the regular milk chocolate (which can be found in some larger supermarkets and some health food stores). Again use margarine instead of butter. The Instant Chocolate Mousse from Nigella Express (p312) can be adapted using margarine instead of butter and using a soy-based whipping cream (such as SoyaToo, see link below) instead of double cream, but you will need to check the packaging of the marshmallows carefully as some contain wheat and some don't.
There are also several variations on chocolate mousse using silken tofu instead of dairy products. Unfortunately we haven't tested are this so can't recommend a specific recipe but if you search of some vegan recipe websites then you should be able to find a suitable version.
