Full question
Hi, we avoid caffeine in our diet, no matter how small the quantity, so I want to make the Chocolate Fruit Cake without the coffee liqueur. Is it just a straight swap from the coffee liqueur to another spirit (e.g. rum or brandy) or is there any other variation that should be made? Thank you for your help with this question!
Our answer
Nigella's Chocolate Fruit Cake (from FEAST) and Incredibly Easy Chocolate Fruit Cake (from NIGELLA CHRISTMAS are both simple to make as they are boil, mix and bake cakes and don't require pre-soaking of fruits. They are also very moist cakes so they don't need to be made far in advance and matured or fed with alcohol.
A coffee-flavoured liqueur is suggested for both cakes as the flavour of coffee helps to boost and round out the chocolate flavour. However it is possible to use a non-coffee alternative and rum or brandy would be good choices. If you also want to avoid alcohol as well then you could use fresh orange juice, though it would give the cake a slightly "chocolate orange" flavour.
