Full question
Hi. I would like to make Nigella's Chocolate Fudge Cake but dont like the idea of using so much icing sugar for the icing as the recipe demands. I absolutely loved the icing for Nigellas Devil's Food Cake and am wondering if the icing for this cake will be suited for the Chocolate Fudge Cake also?
Our answer
Nigella's Chocolate Fudge Cake (from NIGELLA BITES) has a chocolate buttercream that rich and sweet. You could reduce the amount of icing (confectioners') sugar used, but the icing will not be quite as fudgy. It would be possible to use the chocolate ganache icing from the Devil's Food Cake as an alternative. Just bear in mind that this icing is less sweet, so there will be less fudginess to the cake, and you need to allow time for the icing to cool and thicken before you use it.
As both cakes are 20cm (8-inch) two layer sandwich cakes you should not need to change the icing quantity from the Devil's Food Cake if you want to use it on the Chocolate Fudge Cake.
