Full question
Could I replace the golden syrup with something like agave in the Chocolate Gingerbread recipe?
Our answer
Nigella's Chocolate Gingerbread (from FEAST) is a moist cake flavoured with chocolate and ginger and studded with chocolate chips. It is a chocoholic variation on the sticky gingerbread cake that is particularly popular at Christmas.
The cake is made with a combination of golden syrup and treacle or molasses. Both of these syrups are invert sugars that help to keep the cake moist. The treacle also has a slight bitter note that enhances the chocolate flavour and prevents the cake from being cloyingly sweet. However the golden syrup can be replaced with an alternative invert light sugar syrup and agave should be fine. Light corn syrup could also be used as an alternative. However we woud not replace the treacle or molasses with agave as it would affect the flavour of the finished cake.
