Chocolate No Honey Cake

Full question

The Honey Chocolate Cake is so beautiful and I would love to make it, but I don't actually like honey. Is there anything I can use as a substitute?

Our answer

Nigella's Chocolate Honey Cake (from FEAST) is a moist and rich chocolate cake with a chocolate and honey glaze. The honey provides a unique flavour to the cake but as it is an invert sugar it also helps to keep the cake moist. It should be possible to use another type of invert sugar, but the flavour will not be quite the same.

Agave syrup or corn syrup are both invert sugars that are flavourless. They should work in the cake but the taste could be a little flat. Golden syrup tends to be more viscous than other syrups so may not be such a good alternative. Maple syrup has a slightly smoky flavour that could work quite well with the chocolate and this may be the best alternative. However, as we have not tried the recipe with any of these alternatives we are unable to guarantee the results. You may also like to try Nigella's Honey Cake, which, despite the name, doesn't actually contain any honey.
