Chocolate Olive Oil Cake In Food Processor

Full question

I've prepared cakes with almond flour in a food processor, as per instructions, with great success. Is it possible to prepare the Chocolate Olive Oil Cake up to the point of folding in the ground almonds (or the flour) in a food processor? Thank you.

Our answer

Nigella's Chocolate Olive Oil Cake (from NIGELLISSIMA) is a popular cake that can be made gluten-free, with ground almonds, or with regular flour. The cake has very little chemical leavening in it (½ teaspoon of bircarbonate of soda/baking soda) and instead relies on air being whisked into the eggs, sugar and olive oil.

Unfortunately we would not recommend using a food processor to mix the cake. A food processor blade doesn't really whisk air into mixtures sufficiently for this recipe and we think that it will be difficult to get the eggs, sugar and oil into a thick, aerated mixture. In addition, if you are then scraping the mixture into a bowl to add the almonds then you will knock out some of the air that you have managed to incorporate. We would suggest using an electric hand mixer or freestanding mixer, or if you are feeling strong then you could use a balloon whisk and lots of elbow grease.
