Full question
Does the Chocolate Peanut Butter Cake recipe work as cupcakes? If so, can you suggest how long to bake them for?
Our answer
Nigella's Chocolate Peanut Butter Cake (from EAT, SLEEP, REPEAT) has a moist chocolate sponge with a more-ish peanut butter frosting. It is possible to convert the cake from a sandwich or layer cake to cupcakes and there were some examples entered into the February 2021 Cookalong.
Usually a 20cm/8-inch cake converts to 20-24 cupcakes, filling the cupcake cases just under half full with batter. The oven temperature is the same for cupcakes as for the regular cake layers and the baking time is likely to be around 15 minutes, though keep an eye on the cupcakes and check slightly earlier, if necessary. The cupcakes should be risen, firm to the touch and a cake tester inserted into the centre of the cupcakes should come out clean. The cake batter is quite liquid, so we suggest using sturdy or good-quality paper cupcake liners. For the frosting, the single quantity should be enough to give a good layer on top of each cupcake, but use a double quantity if you want to pipe generous swirls.
