I absolutely love Nigella's Chocolate Pudding recipe and have made it several times. It would be great to make a vanilla version - do you have any advice on doing so?

Nigella's Chocolate Pudding (Budino di Cioccolato) is a set chocolate cream. Whilst it is possible to make a vanilla version, steeping the milk and cream with a vanilla pod before making the pudding, it is worth remembering that the chocolate helps the mixture to set so you will need to slightly increase the amount of conrflour (cornstarch) in the mixture. Also you may need to reduce the amount of sugar as you will not have to offset the bitterness of the chocolate and cocoa.
We would instead suggest that you consider trying Nigella's Vanilla Panna Cotta (from Nigellissima). The vanilla scented cream is set with gelatine rather than egg and cornflour but it is a very soft set so the panna cotta melts in the mouth.
