Full question
Hii Nigella! Your chocolate pudding recipe is amazing but being a vegetarian is there any way I can make it without eggs?
Our answer
Nigella's Chocolate Pudding (from NIGELLA EXPRESS) is a rich custard that sets as it cools to a silky chocolate cream. It is thickened with a combination of egg yolks and cornflour (cornstarch) and the dark (bittersweet) chocolate also helps the custard to set as it cools.
It is tricky to change around this particular recipe. However, Nigella has an egg-free filling for her Salted Chocolate Tart which is a possible alternative that you could put into dishes rather than into the tart crust. It is a delicious tart so we would recommend maybe trying the tart itself instead of the pudding. If making just the tart filling then first you would need to halve the ingredient quantities for the filling to make 4 portions. Second, the filling will be slightly firmer set than the pudding (as the tart needs to be sliced) so you may need to reduce the amount of cornflour slightly. If you are making a half quantity of the filling then we would estimate that you could reduce the cornflour from 12.5g to 10g. However as we have not tried the tart filling this way, we are unable to guarantee the results.
