Chocolate Pudding With Different Milk
Asked by catchme. Answered on 30th June 2015
Full question
Hello, I really really love the Chocolate Pudding dessert. Is there any chance I could switch the full cream milk with the skim one? Also, if it is possible, is there any alteration to the recipe? Thank you!
Our answer
Nigella's Chocolate Pudding (from Nigella Express and on the Nigella website) is a chilled chocolate custard that is made with a mixture of whole milk and double cream. The combination of these two makes the pudding feel rich and creamy and hence the portions are modest.
It would be possible to make a "skinnier" version, though you can often tell that lower fat milks or creams have been used. If you would like to reduce the fat a little then we believe it would be best to replace the double cream with either single cream or full-fat (whole) milk. Very occasionally puddings and quiches made with skimmed (nonfat) milk turn out to be a little watery. When making the pudding the method should not change with the substitutions.
