Hi, is it possible to replace the cider in the Cider And 5 Spice Bundt Cake with pear juice, and if so, should I change any quantities?

Our answer

Nigella's Cider And 5-Spice Bundt Cake (from SIMPLY NIGELLA) is an easy to make spiced cake with a light texture. The cake contains cider and this is the alcoholic type (hard cider) and not raw, unfiltered apple juice, sometimes known as "apple cider" outside of the UK. It also needs to be a dry cider and not a sweet cider.

Unfortunately we do not think that pear or apple juice will be good substitutes. These juices are quite sweet and will affect the sweetness of the cake. Extra sugar can also affect the structure of the cake slightly and as the acidity of pear juice is different to cider this could affect how the raising agents work and the cake may not rise as well. We would suggest perhaps looking at Nigella's Pumpkin Bundt Cake if you would like a shaped cake or the Chocolate Gingerbread if you would like more of a traditional sticky ginger-type cake.
