Cocktail Sausages With Sesame Oil
Asked by kwatson. Answered on 22nd February 2013
Full question
Hi there. Nigella's Cocktail Sausages recipe uses sesame oil, honey and soy sauce. Is the sesame oil toasted sesame oil or not? If not, can you advise where to buy? I have tried every large supermarket chain, in both the oil section and in the continental section, and I cannot find non-toastsed sesame oil. Any help would be very much appreciated. Thank you. Karen
Our answer
The Cocktail Sausages recipe appears in Nigella Express and the sausages make a great appetizer or canape. In the UK the term "sesame oil" in a recipe refers to the toasted sesame oil. The oil is dark brown in colour and has a slightly nutty flavour. So the toasted sesame oil is the one you should be using in the Cocktail Sausages recipe. It is found in most major UK supermarkets, usually with olive oils and other cooking oils. In the US it is known as Asian sesame oil and you are more likely to find it in an aisle with Asian foods.
Sesame oil is best used as a flavouring rather than as an oil for frying, so is generally added to dishes at the end of the cooking time, or to marinades or dressings. The untoasted version is good for high heat cooking, but is more difficult to find and more expesive than other vegetable oils.
