Coconut Milk Made From Powder

Hello. In the supermarkets near my house, it is sometimes easier to find coconut milk powder rather than tinned coconut milk. Can I use coconut milk powder to make the Lemon Tendercake? In that case, how many millilitres of coconut milk would be needed to make the cake? Thank you!

Nigella's Lemon Tendercake With Blueberry Compote (from AT MY TABLE) is a vegan cake made with canned coconut milk and vegetable oil. Coconut milk powder can be reconstituted into coconut milk by mixing the powder with warm water so we believe that it should be possible to make the cake using coconut milk made from the powder. You will need 275ml of the milk. However we would mention that as we have not tested the cake using this type of coconut milk we cannot guarantee the results.

In the recipe Nigella suggests using as much of the thicker coconut cream as possible from the can of coconut milk. So if the instructions on the packaging of your coconut milk powder gives the option for a thicker coconut milk then we suggest following these instructions. We also understand that some coconut milk powders can contain animal protein (casein) as an emulsifier. So if you need the cake to be vegan please check the packaging to make sure that the coconut milk powder is suitable for vegans.
