Containers For Storing Salted Caramel Ice Cream

Asked by faithpea. Answered on 8th July 2018

Full question

I want to make Nigella's No-Churn Salted Caramel Ice Cream and wondered if it will still work if I freeze it in one 1L tub instead of 2 x 500ml ones?

Our answer

Nigella's No-Churn Salted Caramel Bourbon Ice Cream is a rich ice cream that is easy to make. Once the ingredients are mixed together it makes approximately 1 litre (4 cups/1 quart). Nigella usually stores the ice cream in 2 x 500ml (2 cup/1 pint) containers.

It is possible to store the ice cream in one larger container. However the ice cream is quite soft so we suggest that you do not leave it out of the freezer for too long if it is in the one large container. As soon as the ice cream melts it changes texture and loses some of its airiness. If you use smaller containers then you can leave half in the freezer until it is absolutely needed and it reduces the risk of some of the ice cream being spoiled. Return the container to the freezer as soon as you have scooped the ice cream into serving dishes.
