Is the weight of clementines in the Clementine Cake the weight before cooking or after blitzing? How much water do you boil them in?

Our answer

Nigella's Clementine Cake (from HOW TO EAT) is a gluten-free cake made with whole, cooked clementines. The weight of clementines stated in the recipe (approx. 375g) is the weight before cooking. It is approximately 4 medium-sized clementines and if you can't get to the exact weight then go for slightly more than the stated weight rather than slightly less.

We would suggest putting the clementines in a saucepan that can hold them fairly snugly in a single layer. Cover completely with water then bring to a boil, reduce the heat and simmer for 2 hours. Keep an eye on the pan and if the water drops more than one quarter then top it up with hot water from a freshly-boiled kettle. Once the clementines have cooked they will be quite soft, so remove them carefully and preferably use a slotted (or perforated) spoon to let the excess water drain away.
