Full question
What is the best substitute for corn syrup in a pecan pie? I have been trying to find the best one in texture and flavour. Please let me know your suggestions, thank you very much!
Our answer
Pecan pie is a tart that is made with pecans, corn syrup, eggs and sugar. Corn syrup is easily available in the US and is often used in pecan pie as it is sweet but without a distinct flavour. In the UK golden syrup is more common and it is a sugar syrup made from cane sugar. It is sold in many countries, including the US, and sometimes under the name of Lyle's golden syrup.
Golden syrup is more viscous than corn syrup so it can give a slightly more solid filling to a pecan pie if used as a direct substitute. However Nigella has her own version of pecan pie, called Pecan Plus Pie (from CHRISTMAS) that uses golden syrup and would be a good recipe to try. The pie has a much higher ratio of nuts to syrup filling than some pecan pie recipes, which gives a pie that is sweet but not cloying. And although the pie recipe uses unsalted mixed nuts, you could use just all pecans (to the same weight as the mixed nuts) if you prefer.
