I wonder if the Cosmo Cocktail Sausages would work with veggie sausages?
Our answer
Nigella's Cosmo Cocktail Sausages are coated in a sharp-sweet glaze made with marmalade, cranberry sauce, lime juice and vodka - the flavours of a Cosmopolitan cocktail. As the sausages cook in the oven, the glaze reduces and forms a deliciously sticky coating.
We suspect that the recipe could be adapted for some vegetarian sausages, but they need to be sausages in casings so that they don't break up during cooking. So check the sausages before you buy them. Also all of the vegetarian sausages we looked at had quite short cooking times, generally 10-12 minutes, rather than the 50 minutes in the recipe. We woud suggest putting the glaze ingredients into a saucepan over a low heat and let them melt together, stirring occasionally. Once the ingredients are fully combined, increase the heat to medium and let the mixture simmer until it has reduced to a sticky glaze. Watch the pan carefully and stir from time to time, to make sure that the glaze doesn't catch on the bottom of the pan. Put the sausages in the lined roasting tin and brush over the glaze, then cook in an oven heated to 200°C/180°C Fan/400°F for 10-15 minutes until the sausages are hot all of the way through and deliciously sticky.
