Does gram flour, which is gluten free, work for the Courgette Fritters? I can't use plain flour.

Our answer

Nigella's Courgette Fritters (from NIGELLA SUMMER) are made with grated courgettes (zucchini), feta cheese and fresh mint. The mixture is bound with plain (all-purpose) flour. Gram flour (also called chickpea flour or besan) is a gluten-free flour made from chickpeas and as it is used in pakoras (Indian vegetable fritters) we suspect that it would be possible to use the flour in this recipe. However please note that the flavour of gram flour is slightly "beany" and this will change the flavour of the fritters overall.

Gram flour absorbs more liquid than plain flour so you may want to add slightly less of the gram flour to start. We suggest using 100g gram flour and then if the batter looks too liquid add the remaining 40g. As gram flour is gluten free there is less risk of the fritters becoming tough if the mixture is stirred too much, so you can add some extra of this type of flour at the end. However we would mention that as we have not tried this recipe with gram flour, we are unable to guarantee the results.
