Going to make again the delicious Sticky Toffee Pudding but I haven't got any double cream for the sauce, so can I use single cream? Thank you.

Nigella's Sticky Toffee Pudding (from AT MY TABLE) is a moist sponge pudding that is served with a simple toffee sauce made from sugar, butter, treacle (molasses) and cream.
Double cream (heavy cream or whipping cream) has a high fat content and this makes it good for sauces that need to be boiled as it is fairly stable. It also gives a rich taste to sauces. The problem with using single cream in some sauces is that occasionally it can split when boiled. However, for this particular toffee sauce the butter and sugar will help to keep it emulsified and so you should be able to use single cream. But we would suggest bringing the sauce up to boiling point after the cream has been added and then immediately removing it from the heat so that it doesn't boil too hard.
