I would like to make the Crunchy Salad With Hot And Sour Dressing but I don't have rice wine vinegar. Is there an alternative?

Nigella's Crunchy Salad With Hot And Sour Dressing (from Nigella Express and on the Nigella website) has an Asian-influenced dressing that includes rice wine vinegar, tom yum paste and toasted sesame oil. Rice wine vinegar is popular in Asian cooking and has a millder, slightly less acidic taste than some other vinegars.

If you don't have rice wine vinegar then you could use white wine vinegar, however we would suggest that you dilute the vinegar with a little cold water, using about 1 tablespoon of the vinegar and 1 tablespoon cold water instead of the 2 tablespoons rice wine vinegar. You can adjust the proportions to your own taste if you prefer something more acidic. You could also use Apple (or Cider) vinegar or distilled (white) vinegar and dilite them in the same way. Another alternative would be fresh lime juice which we would use undiluted.
