Yahnili Makarna - Chicken and Pasta in a Tomato Sauce

Fry the onions until softened but not brown then add the chicken pieces and fry until browned a bit. Add the tinned tomatoes and a bit of boiling water to just cover the chicken, add the stock cube and stir. Simmer on low for about 20 mins or so, taste and season if required. It should be quite thick but not too thick. Meanwhile cook the pasta to packet instructions. Drain, serve with sauce over the top and sprinkling of halloumi cheese and mint.

Introduction
This is a wonderful meal and so easy. Make the sauce beforehand and heat when needed. I make the sauce the night before and after work I just boil the pasta and heat the sauce and its done! Great with grated halloumi and mint over the top.

- farfalle pasta (or penne)
