Full question
Hello! I love Nigella's butter biscuits. I am making a lot of biscuits, so can I make the dough a day before and store it in the fridge until I need it the next day? Thank you.
Our answer
Nigella's Butter Cut-Out Cookies (from HOW TO EAT) are popular for parties as the dough can be rolled out and cut into a multitude of shapes. The dough is easy to make and can be made a day in advance. Wrap the dough discs tightly in food wrap and store in the fridge overnight. Remove the dough from the fridge about 20 minutes before you want to roll it and leave it on the worktop to soften slightly before you roll it out. If the dough is too cold it will just crack as you roll it.
The dough can also be frozen for up to 3 months. Wrap as above and put the discs into a freezer bag, seal tightly and freeze. Thaw the dough overnight in the fridge before using, allowing time for the dough to soften slightly out of the fridge before rolling.
