Preheat the oven to 180c First measure the flour and oatmeal into a bowl ,add the salt ,baking soda ,vinegar and sugar mix thoroughly. now rub in the margarine, until the mixture is crumbly, then add the milk and mix to a dough. Transfer the dough on a lightly flowered board to roll out fairly thin . cut into 2 1/2 inch shapes for 15-20 mins (do not over bake) cool on wire tray .

I'm only 15 ,and love cooking I've recently gone through all the cookery books in my house and found this in my mums handwritting so it must be hers . I'm afraid in my house we only use ounces and have very old scales

- 4 ounces quick-cooking oats (medium)
- ½ ounce brown sugar
- 3 ounces margarine
- ½ teaspoon vinegar
- ½ teaspoon baking soda
- 1 pinch of salt
- 1 tablespoon milk

I tried this recipe today since I have become addicted to British digestive biscuits. Unfortunately, as an American, they are hard to find in the United States. Once I did find them, they were very expensive. I figured the best way to go was to make them and I'm glad I found this recipe! I had to do some conversions but I figured it out. While I was not able to cut the dough, I dropped it onto the cookie sheet and it baked normally. The result was delicious! I can taste a hint of the digestives I've purchased but it's very different. Your mum has a very yummy recipe!
