The Red Cabbage and Cranberries recipe calls for dried cranberries. I’m assuming unsweetened, which can be hard to find in my area. Can I substitute fresh cranberries, which are readily available during the holiday season, and if so, do I need to (a) increase the amount of cranberries, since fresh are larger than dried, and/or (b) reduce the amount of liquid, and if so, by how much?
Our answer
Nigella's Red Cabbage With Cranberries (from AT MY TABLE) uses a combination of fresh and dried cranberries. Most dried cranberries are sweetened and the sweetened type are fine to use. They provide a slight sweet-sharpess to the red cabbage.
We would prefer not to use extra fresh cranberries as you will need to reduce the liquid, though it is difficult to say by how much. Also fresh cranberries are very tart and you would need to balance this with extra sugar in the dish and as we have not tried this it would again be difficult to judge the amount. Raisins or sultanas (golden raisins) would be the best alternatives if you can't get dried cranberries.
