Do You Use A Mixer To Mix In The Almonds For The Chocolate Olive Oil Cake?

For the Chocolate Olive Oil Cake - do you use the paddle attachment to mix in the ground almonds in step 5, or just tip them in and then stir them in with a spatula in step 6?

Our answer

Nigella's Chocolate Olive Oil Cake (from NIGELLISSIMA) is a moist gluten-free cake that is made with ground almonds (almond meal or almond flour). It can also be made with wheat flour for those that are not gluten intolerant.

The recipe method states that you should add the ground almonds at the end of step 5, after the cocoa mixture has been added. The almonds can be mixed in using the paddle of the stand mixer as there is no risk of any gluten development or a tough cake since almonds are gluten free. If you are using plain or all-purpose flour then you could mix this in by hand, if you prefer, though we have made the cake with plain flour in a mixer and still found the baked cake to be moist and tender.
