I’m following a yeast-free diet. Do you have any good bread recipes that would work with this diet? I was particularly looking for recipes that fit with a busy life!

Whilst a lot of bread is made with yeast, there are some types of bread that are leaved with bicarbonate of soda (baking soda) plus an acidic ingredient (usually buttermilk) rather than yeast. These are called quick breads and the most common type in the UK is soda bread. Nigella has a recipe for Soda Bread Buns With Fennel Seeds And Cranberries (from SIMPLY NIGELLA) and these are both easy and quick to make. The cranberries and fennel provide extra flavour, but they could be omitted if you want a plainer bread. There are storage and freezing instructions at the bottom of the recipe.
Cornbread is another type of quick bread that is popular in the US and is made with baking powder. Nigella's Cornbread-Topped Chilli Con Carne is usually baked on top of the pot of chilli, but if you make a half quantity of the recipe then it should be enough for a 20cm (8-inch) square pan that has been lined with baking parchment (parchment paper). Bake at 180°C/160°C Fan/350°F for about 25 minutes, until risen, firm to the touch and a cake tester inserted into the centre comes out clean.
