Full question
I'm thinking of buying a 25cm springform tube pan for Nigella's Easy Almond Cake. Can you suggest any other Nigella cakes that would be suitable for baking in this particular pan? Thank you!
Our answer
Nigella's Easy Almond Cake (from HOW TO BE A DOMESTIC GODDESS) is particularly easy as it uses marzipan to give the flavour and moisture that you get from almonds. The cake is baked in a 25cm (10-inch) springform tube pan.
The volume of these pans is usually around 2.8L (12 cups), which means that it can be used for Nigella's bundt cake recipes and we would suggest the Thyme And Lemon Bundt Cake, Pumpkin Bundt Cake and Cider And 5-Spice Bundt Cake. You may also be able to use it for the Yogurt Pot Cake, though as the springform pan has a bigger diameter than the ring mould, the cake may be slightly more squat and the baking time slightly shorter. It may also be possible to use the pan for Nigella's Spruced-Up Vanilla Cake, but the batter for this cake is a little on the liquid side and may leak out of a springform pan, unless the seal on the base of pan is extremely tight.
