Could you leave out the sugar in the dressing for the Vietnamese Chicken And Mint Salad?
Our answer
Nigella's Vietnamese Chicken And Mint Salad (from NIGELLA BITES) has a dressing made with vinegar, oil, lime juice, fish sauce, sugar, chilli, garlic and onion. This reflects the hot, salty, sweet and sour nature of many Asian dishes. The sugar balances out some of the other flavours.
As the sugar acts as a seasoning in the dressing and adds balance to some of the sour elements, we would not particularly recommend omitting it completely. However, you could add enough sugar to suit your own palate. Mix together the other ingredients for the dressing and then add the sugar a little at a time, tasting between each addition, until the dressing suits your own taste.
