Hi! I have around 20 people coming for Easter so I was wondering if it is possible to double the Easter Egg cake recipe? Any advice would be appreciated, thanks!

Nigella's Easter Egg Nest Cake (from FEAST) is a flourless chocolate cake that is perfect for holiday weekends as it can be served as either a dessert after a celebratory feast or as an afternoon tea time treat. The cake is made in a 23cm/9-inch springform pan and serves 8-10 people as it is quite rich.
We would not particularly recommend scaling the cake up as it is difficult to bake very large versions of cakes in domestic ovens. Also as the cake is gluten free it will sink back as it cools and you could find that larger versions may end up with a slightly skinny centre. We would suggest instead that you make two cakes. The cakes can be made a day in advance and stored in an airtight container, or in the springform pans tightly wrapped with clingfilm, in a cool place overnight. It is quite difficult to remove the cakes from the base of the springform pans so you will need two pans but if you have a local cookware store it may be worth asking if they have pans to rent rather than buy. Make sure the cakes are completely cool before covering and storing. Top the cakes with the cream and decorations just before serving. Leftovers should be stored in the fridge, loosely covered with clingfilm (plastic wrap) for up to 2 days.
