Egg Sizes Used By Nigella

Hi Team Nigella! When you list in your recipes that you require a 'large' egg, do you mean large as per US or UK guidelines? Would be grateful for a response. Cheers, Diana

Our answer

In most of Nigella's recipes large eggs are used and these are UK large eggs. In the UK and Europe large eggs are specified as being between 63g and 73g in weight (in shells). This is between 2 1/4 ounces and 2 1/2 ounces and so for the US it would be the same as an extra large egg.

Extra large eggs should be available in most major grocery stores in the US. The size of egg is most important for baking. For other recipes containing eggs you could use a US large egg, though try to use the largest one that you can see in the carton as in our experience the size of eggs in the carton can vary slightly.
