Filling Moulds For Chocolate Babycakes

Do you have to fill the moulds to the top with batter for the Molten Chocolate Babycakes? If I do will they not rise and spill over the top?
Our answer
Nigella's Chocolate Molten Babaycakes recipe (from HOW TO BE A DOMESTIC GODDESS) makes enough batter to partially fill 6 metal individual pudding moulds or ramekins. The pudding moulds usually have a capacity of about 200ml (scant 1 cup) and a diameter at the top of 7.5cm (3 inches). The batter should come about three quarters of the way up the sides of the moulds. The cakes will rise a little as they bake, though they will not rise as much as a traditional sponge cake.
Dariole moulds can be slightly smaller than this, often with a diameter of 5.5cm to 6.5cm. So if you are using dariole moulds you will find that there may be slightly too much batter and it is likely that the recipe would make enough to fill 8 of these moulds. If you need to use these moulds then fill them 3/4 full of batter and bake any excess in a ramekin. Smaller moulds will take less time to bake so you may need to shorten the baking time by 2-3 minutes, to make sure the the cakes still have a molten centre.
