Can I substitute plain flour for buckwheat flour when making the Triple Chocolate Buckwheat Cookies?
Our answer
It is possible to use plain (all-purpose) flour instead of buckwheat flour in the Triple Chocolate Buckwheat Cookies (from Simply Nigella and on the Nigella website). However the cookies will not have the slightly smoky flavour that the buckwheat flour imparts.
Also plain flour contains gluten which means that the cookies will not quite have the tender and melting texture that the buckwheat version have. Please note that with plain flour the cookies are not suitable for coeliacs and those with wheat intolerances.
