Has anyone made a gluten free version of the Chocolate Olive Oil Cake? If so, what flour, or combination of flours would you recommend? Many thanks in advance.
Our answer
Nigella's Chocolate Olive Oil Cake (from NIGELLISSIMA) is either made with ground almonds (almond meal) or plain (all-purpose) flour, and not a mixture. Gluten free flours generally absorb more liquid than regular flours so adjustments would need to be made to the ingredients to prevent the cake from becoming dry and we have not tested the cake using any gluten free flour combinations.
As the cake is already gluten free if made with ground almonds, we would prefer to recommend that the almond version of the recipe is used for a gluten free version. Nigella also has a gluten free baking page with a host of other recipe suggestions for cakes and desserts.
