Could I substitute coconut cream for the butter for the Flourless Chocolate Lime Cake? Got a guest who's unable to eat gluten or dairy.
Our answer
NIgella's Flourless Chocolate Lime Cake With Margarita Cream (from KITCHEN) is gluten-free and gets its structure from the eggs, sugar and ground almonds (almond meal). The cake does contain some butter for flavour and to add extra fat so that the cake keeps well. However we suspect that it would not work well with coconut cream as coconut cream has a higher percentage of water than butter (approximately 20% for coconut cream vs 80% for butter). The lower level of fat and higher proportion of water will affect the texture of the cake.
We would instead suggest trying Nigella's Chocolate Olive Oil Cake as this is both gluten and dairy free. You could try adding lime zest to the batter of this cake, though it is extremely popular just as it is.

Coconut cream wouldn’t work, but coconut oil would probably work very well with a 1:1 substitution in the original recipe.
