I'm hoping to make the Forgotten Pudding the evening before a dinner party (i.e. making it a day ahead). On the following morning will it be OK to remove the meringue from the oven and keep it for that night? Should I keep it in the tin and wrap it in foil? Thanks!

Nigella's Forgotten Pudding (from NIGELLA EXPRESS) is a meringue mixture that is put into a hot oven and then the oven is switched off and the meringue is left in the cooling oven overnight, to give a soft, marshmallow base. It should be fine to serve the pudding the evening after you make it, as long as you don't add the whipped cream and fruit until just before serving.
We would suggest leaving the pudding base in the swiss roll tin (jelly roll pan) as this will provide some protection while you store it. Make sure that the base is completely cold then cover loosely with foil or clingfilm (plastic wrap) and leave in a cool and, importantly, dry place. Any moisture or humidity will cause the base to soften more and become slightly sticky. Any leftover pudding topped with cream and fruit should be stored in the fridge, loosely covered with foil or clingfilm, and eaten within 24 hours.
