Hello! I'd like to know if the Cherry Cheesecake can be frozen.
Our answer
Nigella's Cherry Cheeseckae (from Nigella Express and on the Nigella website) is an unbaked cheesecake made with cream cheese and whipped cream. The cheesecake should freeze, without the cherry topping, as long as full fat cream cheese is used. Low fat cheeses can sometimes "weep" when they are thawed.
Wrap the cheesecake base and filling, still in the springform pan, tightly in a double layer of clingfilm (plastic wrap) and a layer of foil. Freeze for up to one month. To defrost the cheesecake, unwrap it and cover it with a fresh layer of clingfilm then leave overnight in the fridge before unspringing it and spooning over the cherry topping.
