Full question

Can I freeze the Chocolate Mint Cookies successfully for about a week or so before? I need to make 100 for an event later this year.

Our answer

Nigella's Chocolate Mint Cookies (from NIGELLA EXPRESS) are chocolate chip cookies with a chocolate mint glace icing glaze. The cookies can be frozen but we recommend that you freeze the cookies without the glaze as glace icing can become a little sticky if frozen and defrosted. To freeze the baked cookies, let them cool completely then freeze in airtight containers or in resealable plastic bags for up to 3 months. To thaw the cookies, put them on a wire rack at room temperature for about an hour then drizzle over the glaze.

The unbaked cookie dough can also be formed into mounds on a baking sheet lined with baking parchment (parchment paper) and frozen until solid. Transfer the frozen dough to resealable bags and freeze for up to 3 months. Bake directly from frozen, adding 1-2 minutes to the cooking time.
