Can Nigella's Cupcakes be frozen successfully ?
Our answer
Nigella's Cupcakes (from Domestic Goddess and on the Nigella website) are based on a sponge cake recipe and will freeze quite well. As they are small they will deteriorate slightly more quickly than large cakes and we also suggest that they are frozen without any icing or frosting on them as some icings can turn watery as they defrost.
To freeze the cupcakes first make sure that they are fully cooled and then put them into airtight freezer boxes. If you need to stack the cupcakes in layers then put a piece of baking parchment (parchment paper) in between each layer. Freeze the cupcakes for up to 1 month. To defrost the cupcakes, remove them from the boxes and leave them on a wire rack at room temperature for about 1 hour.
