When you make light sponges for either cakes or jam rolls, we always line our tins. Often when taking the paper off, it takes some of the cake with it. Always gently tear the paper off in several strips... pick up a corner of the paper and gently tear it, whichever way it wants to tear. ... it reduces the surface tension of the cakes and comes off easily... no more wrecking the bottoms of cakes!
