Can I freeze the Egg And Bacon Pie once it has been cooked? I made one yesterday and it is in the fridge.

Our answer

Nigella's Egg And Bacon Pie (from HOW TO BE A DOMESTIC GODDESS) contains a filling of cooked pancetta or streaky bacon that is baked with beaten eggs, onions and parsley. The pie can be eaten warm or cold and if refrigerated it should be put into the fridge as quickly as possible (and within 2 hours of baking) and eaten within 3 days.

We suspect that it is possible to freeze leftovers of the pie, but would caution that in some cases cooked eggs can turn slightly rubbery on defrosting. This tends to happen most with boiled egg whites, but as the pie contains whisked eggs with no extra liquid added there is a small risk that this may happen to the filling on defrosting.
