Freezing Mexican Lasagne

Can the Mexican Lasagne be frozen? If so, is it best to freeze it before it is cooked or after?
Our answer
The Mexican Lasagne (from Kitchen) can be frozen and our preference would be to freeze it after assembly but before cooking. Wrap the dish tightly in a double layer of clingfilm (plastic wrap) and a layer of foil. Freeze for up to 3 months and thaw the lasagne overnight in the fridge.
Always completely thaw the lasagne before cooking it. The lasagne can be baked following the instructions in the recipe but you will need to allow an extra 10 minutes or so cooking time and check that the lasagne is piping hot in the centre before before removing it from the oven and letting it stand.
Leftovers of cooked lasagne can be frozen for up to 2 months in individual wedges, wrapped tightly in clingfilm and then in foil or a resealable plastic bag. Thaw in the fridge overnight and reheat by unwrapping the wedge, transferring it to an ovenproof dish and heating in an oven preheated to 180c/350F for 15-20 minutes. Make sure the wedge of lasagne is piping hot all the way through before serving.
