Is it possible to freeze Nigella's Rocky Road Crunch Bars (from Nigella Express)?
Our answer
Rocky Road bars do keep fairly well and if stored in an airtight container in a cool place they will keep for up to one week. If it is very warm you could store them in the fridge though do let them sit out of the fridge for about an hour before serving as they taste better if not completely chilly.
The bars can also be frozen in an airtight container. Put a piece of baking parchment between each layer of bars to prevent the bars from sticking together. Thaw the bars overnight at cool room temperature (if thawing only one or two bars at a time then they will only take a couple of hours to thaw if put on a wire rack in a cool place.
If you are freezing all of the Rocky Road bars for a party or event than you could refrigerate the mixture in its pan until solid, then wrap the whole block tightly in a double layer of clingfilm (plastic wrap) and a layer of foil and freexe this way. Thaw overnight in a cool place and then cut up into bars, using a heavy sharp knife, before using.
